NEW high protein recipe (GF+DF)

A satisfying meal...


including both animal and plant protein, with just one ingredient swap to make it vegetarian.


Swap steak → handful of your favorite raw nuts, or fill the sweet potato with legumes (edamame, kidney beans) and quinoa

Ingredients:

  • 1 brown rice cake

  • chickpea mash

    • 1/2 cup chickpeas, 1 tsp tahini, 1 tbsp olive oil, dash of salt

  • 1 scrambled egg

  • 1 small sweet potato

  • 3 oz steak tips


Instructions:

  1. Mash chickpeas, tahini, and olive oil in a small bowl (add seasoning after)

  2. Spread your chickpea mash on the rice cake

  3. Scramble one egg in a pan

  4. Cook sweet potato in oven for 15 minutes @ 350F /microwave for 2-3 minutes (check on it periodically)

  5. Cook steak tips in a heated skillet (I cooked with ghee)

    - Vegetarian option: Cook quinoa and edamame to fill sweet potato


**Option → sprinkle nutritional yeast on top of rice cake or sweet potato to add a cheesy flavor and small boost of protein
